Head Chef Doug Innes-Will has worked in many top restaurants and retreats throughout Australia. Doug's food philosophy is minimalist, with a strong empasis on respect of produce, produer and environment and his style is a reflection of these values and the input and talent of the chefs and his team.

I have since my first day in a commercial kitchen yes. The job has been good to me and I have worked with some very talented people.

What is your feature flavour these days?
We are excited by the old ways in the kitchen at Peak Lodge. We are curing, smoking, and fermenting foods to create a menu unique and respectful to our remote location.

Good food and cookbooks.

There are so many, right now it's the team at Peak.
What do you love about this business?
It's an act of giving to cook for someone. I enjoy the fact that my work can bring happiness to people. The other is the people who work hospitality; they are some of the best people you will meet.
